The Book

Before i start cooking i think its only right to portray the book to you if anyone is listening.I am essentially going to create a book review on VAU The Cookbook. After i post the book review i will begin to create a dish a week and write about this process and include one quote or interesting fact form the book about VAU Kleeberg or his team of brilliant chefs.

My story

My name is Kevin Smyth i am a student from Dublin (ireland). In college i study Baking And Pastry Arts Management. I have a great passion for quality, flavorsome, healthy and innovative food.]

In applying for degrees in 2009 i was told that my language exemptions would prohibit the degrees i could apply for even though i achieved points above the requirements.This meant that Culinary Arts the course i aspired to do was not an option.My only option was to do another degree in which didn't require a language and then go into culinary arts.

Two years into my current degree baking and pastry arts management i am now in the process of applying for advanced entry into culinary arts.So basically i was advised to start a food blog something that never crossed my mind but now that it has i have gotten so inspired thinking of ideas etc.

Kolja Kleeberg is the head chef of VAU a michelin star resturant in berlin an exciting city of culinary innovation.On a visit to Berlin my mother met Kleeberg and dined in VAU. After studying the "VAU cookbook" i have been inspired to cook one full high end recipe from this book a week (every sunday).After this i will talk about any difficulties or new information i find out in the process of re creating these dishes and up load pictures.
